What's For Dinner Mom?- Make A Healthy Choice!



TGIF Guys!
I hope you will not make a choice like the one pictured in this caption(smile)this evening. Seriously, I've got a great recipe for all my readers that are committed to a lifestyle of taking off the weight, eating healthy and living longer. Baked Parmesan Chicken

½ cup seasoned bread crumbs
3 tbsp Parmesan cheese
1 tsp Italian seasoning
¼ tsp salt
1 tbsp olive oil
4, 6 oz (1.5 lbs) boneless, skinless chicken breasts
Nonstick vegetable cooking spray

Instructions:

In a medium-size bowl combine seasoned bread crumbs, Parmesan cheese, Italian seasoning, and salt. Mix well. With a paper towel pat chicken breasts dry. Lay chicken on a plate and coat with olive oil. Cover chicken with bread crumb mixture, coating all sides, and place in a baking dish sprayed with vegetable cooking spray. Sprinkle remaining crumbs over chicken. Bake uncovered at 375°F for 35 to 45 minutes or until done. Makes 4 servings.
